Hey, I'm completely jealous that you can make udon. I've always loved udon but making it seems incredibly difficult so I've never tried... Plus gathering the materials for it seems hard too. :\
LOL, the inside out-ness of my California rolls is because of the fact taht I've always eaten them like that. I did try them outside in but they turned out too thin (have no idea why, maybe I should use more rice?) so I didn't continue making them that a way.
You're not supposed to do anything with the nori. It's good as it is. You just don't want them to dry out so I usually wait until the very last moment to open the package.
My rice was too sticky the second time as well... The first time the rice was a bit raw so I increased the water for the second time. Turns out I increased too much and I lost a good amount of rice just from washing it off my hands...
