For once this week I feel rested. After staying up late to do my Japanese assignment on Wednesday night (more like Thursday morning) until 3 AM, I basically slept for three and half hours, woke up and went to my 8 AM class. I so wanted to skip but decided not to. Why, I have no idea. I guess I was trying to be good. :\

Thankfully it was a short class and we ended about an hour early (normally it's a 2.5 hours long class). I went back and for some reason, was stupid enough to spend the time doing homework. I really should have napped. I wanted to nap. But once I made something to eat, I realized that I didn't feel all too bad.

Big mistake.

I did work for a few hours until it was time for my Japanese class. By the time I got there, I was feeling pretty craptastic. It was like all of a sudden during the bus ride down, all the energy that I had been feeling just vanished and I was just tired and sleepy and I knew I was in trouble.

The class thankfully was uneventful so nothing happened to make it any worse. After it, all I wanted to do was to go back to my dorm and fall into bed, but I couldn't. I've been putting off getting my Work Application signed and verified for America Reads for weeks now and my first timesheet was due the next day and I knew I had to get that part of it in at the very least. It's something that I've had to do every year, even though I've been in America Reads for the past three years. Basically it's so that they know we have work study allotment because if not, then they have to pay us a different way.

So I head over to the Wasserman Center and I get it signed but it took a while because the people there were slow. But eventually I get my three copies and I can leave... I thought it would only take about half an hour but it ended up taking me about an hour which was not cool.

I then had to go to K-Mart to buy some stuff, like an umbrella since it was going to rain on Friday (which it didn't -- Weather.com so lied to me) and more dishwashing detergent since we ran out. Plus a peeler since I had carrots that I couldn't eat because they weren't peeled. I just couldn't do it. Some things I can eat with a peel on -- like potatoes and apples but carrots just creep me out. Extra fiber my ass. Plus, I had a container of Garlic Hummus that was just asking to be dipped in with carrot sticks. So I needed a peeler.

Oh! That reminds me. On Tuesday I had gone over to Astor Place and what did I see? A film crew that had taken over the Starbucks. Sex in the City was being filmed inside and everyone was gathered around, trying to get a glimpse of Sarah Jessica Parker (that is her name right?). I think I saw her but she moved away so it was very brief... I wasn't a fan of the show so I couldn't get really excited about the whole thing... :\ Oh well.

But anyway, back to what I was talking about. After going to K-Mart, I went back to my dorm and ended up making dinner since it was about that time and I was hungry... I then was going to take a nap but then I realized Survivor was on so I couldn't. And then there were other shows and I just said screw it and resolved to go to bed early.

Didn't quite happen for some reasons since I went to bed around 1 AM. :(

Friday I had work and I so didn't want to wake up for it.... I had to pick up blank timesheets and hand in my signed Work Application since I totally forgot about handing it in after I got it signed on Thursday. So I had to wake up early to go into campus do that and from there I went to work.

This year I have two teachers I'm working with, Mr. Rosen who is awesome and I wish I had more classes with and Mr. Babauta who is new obvious and has some horrible students. He's cool but his students not so much. At least with Rosen, he seems to keep a quite class with most of the students trying. Babauta, well, a lot of the kids seem to have failed the class before and are repeating and they're obnoxious and mean and they have no motivation to do the work or to receive help. Some of them are okay and genuinely try, the freshmen mostly, but it's a chaotic classroom. Plus, I don't think any of them really have an interest in Ecology at all...

Rosen, however teaches the special needs class who generally are nice and try their hardest even though Math isn't their subject and it's hard for them and I appreciate their effort. I have some old students that I've tutored before so it's nice to see them again.

After it, I decided that I wanted to take the bus home but the bus wasn't even in sight when I got to the bus stop so I decided to go on a whim over to Hong Kong Market on the next block over. I needed vegetables since all the food I had were meats. I can't make food with only meat!

So I went into buy bok choy only but ended up buying bok choy, ong choy (water spinach), some dried longans, some panko (I'm making so making beef korokke!) and I found some flavors of Ramune that I hadn't tried before so I bought three bottles of that as well. Ah, Ramune, how I love thee...

I went home and made dinner -- it consisted of soy sauce chicken (yum!) and ong choy, cooked with minced garlic and fermented tofu (yum yum yum!). It was simple and easy and sooo satisfying. I finished off the rest of my soup, a Sei Mei one (Four Flavors, which refers to the type of stuff added to the soup) and it was a very complete meal.

I went to bed around 2 AM last night and I slept for ten whole hours... So nice but I woke up around noon feeling not so rested up. But I woke anyway because I was getting hungry.

I made myself a simple breakfast/lunch, consisting of peppers, onions and mushrooms scrambled with eggs of which I topped with crushed tortilla chips and salsa. Both the tortilla chips and the salsa were left over, the broken tortilla chips at the bottom of the bag that normally try to eat the bigger pieces and throw away the rest and the tablespoon or so of salsa that I had eaten the chips with... So why waste them when you can dump them on eggs and make a southwestern-y type of egg breakfast? It was magnificent. I also added some pepper jack cheese into the eggs, just as they were setting in so they were all nice and melty and they added another dimension to the dish. The salsa was a roasted garlic one so the whole dish was a mix of flavors and textures. All in all, very satisfying.

After eating, I decided I wanted to more sleep so I did, for another three hours or so. And that gets me back to here and now, feeling rested and good for the first time in over a week. Ah, I like it. ^^

Right now I'm making my Bak Wong Fa soup, which is actually the flower of the Pitaya. I hadn't known it before, but it's where Dragonfruit come from which is awesome. But when the blossoms are dried, they make a very nice soup with just dates and pork bones. And while that's cooking, I'm enjoying my dried longans straight out of the bag. I bought too many of them, about a pound, but they weren't offered in a smaller package. Typically, I would only use a couple of them in soup because they're so sweet so I definitely have too much. Oh, well, they're good just like they are when dried. They're like raisins since they also have a very high sugar content. They have a distinct taste, something I'm sure some people wouldn't like because they're unused but I personally like it. It hints at the fresh fruit, something that I've always enjoyed.

Tonight's dinner will probably be more of the same, ong choy because I don't want it to go bad on me and something meaty... Maybe I'll use the rest of the soy sauce to make more soy sauce chicken or maybe I'll just toss a Chinese sausage into the rice cooker. Whatever, I don't need a meat but either would be pretty easy to make... And I'll have my soup! I'm so excited! It is my favorite soup after all. ^^

I'm planning Thousand Year Old Egg Congee with Pork for tomorrow's lunch (yummy!) so I'm hoping the brand of Thousand Year Old Eggs that I bought are okay... When it comes to stuff like that, it's practically a crap shoot whether or not they're okay. I couldn't find the brand I normally buy so I tried for a new one hoping that they won't be bad. It would suck if all I had were just pork congee. Not terrible but I do love Thousand Year Old Eggs... So yummy...! If you eat them straight up, I can see how some people wouldn't like them but they're wonderful in congee and that's really the only time I've ever had it so I have only good memories of it. I was quite miffed when they used it on Fear Factor as a yucky food. Seriously, that stuff is yummy. I like to have some of it uncooked in the congee and add it to it as a garnish because usually after the congee is cooked, all the eggs have melted away and I like being able to eat chunks of it. Mmm...I'm making myself hungry now.
