Feb. 12th, 2011 02:44 amApparently there is such a thing as too much garlic. Apparently five large cloves is too much. Maybe it's the fact that they were fresh and freaking ass huge. Maybe it's because they were raw. But damn are my taste buds zinging. I actually kinda like it but I don't think I could serve this version of hummus to other people.
And damn, I'm eating a lot of hummus lately. I can't seem to stop making it. And every batch is just so yummy and tasty and better than the last one... I think maybe if I had dropped the garlic down to three or four, then it would be considered perfect. I even let this batch rest and the flavors other than the garlic seem spot on. Of course, the fact that the garlic is overpowering is making it hard to judge that fact that it seem okay to me. I'm also very pleased with the consistency -- it's a lot smoother and creamier than my last batches which I attribute to the fact that I blended it much longer and made it a point to mix it even more often than usual. And I learned one should mix the chickpeas and tahini first without the other ingredients to make it smoother and I think it helps.
But for now, I think I'm on my last hummus batch. I'm going to show restraint and not buy any more chickpeas. Without chickpeas, no hummus. And seriously, three batches in two weeks is probably too much. Actually, it is too much. Thank god it's actually good for you or else I would be in the same place I was this summer, baking uncontrollably, eating them uncontrollably and gaining 10 pounds. That had been bad. Thankfully, I've now shaved off that extra weight (though the last five pounds was pretty difficult). Hopefully all the hummus I've had recently didn't mess up all that work...
