IMG_4462 I got off my lazy ass and posted my pictures of my roasted garlic hummus. I had taken pictures of the first batch of hummus I had ever made but I was a bit embarrassed with it because the paprika I sprinkled went and got mixed with the olive oil and it looked awful. :( But I did post them on my Flickr so they're out there if you wanted to check it out.

This time, I think I'm on my way to perfecting the recipe. This time, I added more lemon -- almost all the juice of one lemon and I used the entire roasted garlic bulb. Also, I added some coriander in addition to the cumin. Surprisingly, the garlic flavor wasn't very pronounced. I think I might need more than one bulb... I know roasting the garlic mellows the flavor but I could hardly taste it. Maybe a few cloves of raw garlic?

Either way, it turned out well this time! It makes a ton of hummus and I ate even less of it this time than last time. But this time I have Big Wheat Thins, my favorite way of eating hummus. I'm still not the biggest fan of olive oil but paprika definitely makes it awesome. I must add more next time.

But I'm definitely on the right track of making a hummus that is tailored to my tastes. And I've definitely perfected making tahini with a mortar and pestle. The trick to it is to add water a little bit at a time until it is the consistency you want it to be. I wish I could get hulled sesame seeds since they really make it bitter but I'm consoling myself with the fact that it's much, much more nutritious.

Maybe the next batch, whenever it may be, whenever the fancy strikes me, I'll have the absolute best hummus that I won't feel like I need to improve. For now, I'll just enjoy what I've made and continue watching Castle. And after this, the scary looking House.

edit x1: Is anyone else loving the Google doodle for Jules Verne? I've been having a lot of fun playing with it and immediately after I first saw it, I thought to myself, Twenty Thousand Leagues Under the Sea. Surprisingly enough, it really was that! I only thought that simply because it was one of my favorite stories as a kid... Certainly, my most favorite Jules Verne book, though Around the World in Eighty Days is a very close second. But for the longest time after reading Twenty Thousand Leagues Under the Sea, I was obsessed with oceans and submarines... Of course SeaQuest didn't hurt that obsession. To this day, I still have the desire to live long enough to see man colonizing the seas and living under water in the oceans...

I loved Around the World in Eight Days. :D Still have to read Verne's other books thou ~

I talked to my Indian coworker after reading your post humus and he said he'd send me some recipes :D and he said he knows like three ways to make humus without tahini, though he says that Ralphs has tahini in large jars.

Totally give Twenty Thousand Leagues Under the Sea a try! It's good, I swear!

I'm jealous, tahini probably isn't as expensive there as it is here... And for tiny jars too! When I saw it was over $10, I completely balked and was like, I can totally make that myself! And I would suspect hummus without tahini would taste different... I've never had it without it so I really wouldn't know but I'm not sure I want to go there either.

And go and make some hummus yourself! It's incredibly cheap and easy! You can totally do it in five minutes if you don't do the tahini yourself. Even then, if you have a food processor, it'll probably go incredibly quickly.
