I just tried to recreate the Big Mac (sorta) based on this:



Unfortunately, I ate my result before I realized I should take a picture of it. Whoops.

But in actuality, it wasn't very much a Big Mac recreation so much as based on the Big Mac. Now, I have a great love of the Big Mac. Ever since I got old enough to want more than a plain cheeseburger, small fries, and a small coke, I've been eating the Big Mac Value Meal. When Burger King (which I generally like more than McDonalds) came out with their version of the Big Mac, the Big King, I ate that. But despite being a Burger King girl, I can't get over the Special Sauce on the Big Mac. I'm sure I'm not the only one. I'm pretty sure the only reason to be eating a Big Mac is to wallow in that Special Sauce sauce. And since I had been gorging myself on McDonalds the past two weeks (I just can't seem to redeem a single medium fries on their own, I have to get a something with it like a Big Mac or 20 pieces of Chicken McNuggets -- I've eating at McDonalds like three times last week and I already feel fatter, so fat that I can't justify baking cookies for my Grandmother because it'll still just be more fat and sugar into my belly), I've remember just how badly I love the Big Mac and its Special Sauce...

I think part of it has to do with that fact that I hadn't touched anything McDonalds in maybe five years. For the most part, I think it's overpriced. And it's junk. And I generally like real food. But that damned Monopoly promotion has suckered me into going into their stores again. And that's how I became re-obsessed with the Big Mac.

And now I think I've recreate the Special Sauce pretty well... They didn't give an exact recipe in the video but what I took out of it was it was a mayo based sauce with plain yellow mustard, white wine vinegar, sweet pickle relish, paprika, onion powder and garlic powder.

I had everything except the white wine vinegar in my pantry so I set about recreating it. And then I discovered later, I was out of relish. :( But I did have some Bread & Butter chips so I diced those instead. It's basically the same thing, right? I mean they're both the same type of sweet and sour pickle taste... Anyway, I just wanted enough for a single burger so I just mixed a 1/4 teaspoon of each of the ground spices and then just sprinkled that onto the mixture. And I substituted lemon juice for the vinegar since the only vinegar I had was rice (too delicate), and apple (too apple-ly). I figured the fruitiness of the lemon would be a close approximation of the lemon... And I tossed in a little sugar to sweet it since white wine vinegar tends to be a little sweet.

In the end, I added too much mustard (a little goes a long, long way since I basically just added a squirt and it was too much) and lemon juice. Which is insane because I only used the smallest half slice (there was maybe 1/8 teaspoon of juice there) so I added more mayo and more of the chopped pickles. It still didn't taste quite right. And that's when I realized my sauce wasn't as sweet as McDonalds' version. :\ So I added more sugar. And more sugar. And I spooned a little of the pickle juice into it. And that's when it started clicking together. It's pretty damn tasty. And it's close enough to the McDonalds' version that I don't mind that it's slightly off.

I built my burger like I normally did. I was tempted to do the whole cut the bun for the middle bread piece but I didn't mostly because I didn't want two 1/4 pound hamburger patties. So it was only a single patty burger. And I couldn't help it, I had to place the cheese on top of the burger as I was grilling it. There's something weird about having a cold slice of American cheese placed underneath the hamburger patty and that's all I'm going to say about it. I didn't add pickles since I didn't have any normal dill pickles (I don't eat them and I generally pick them off beforehand and eat them with a couple of fries slathered with ketchup so I can mask the taste of them). I did put more lettuce than I generally do since I don't quite like a lot of height on my burgers so I usually use it sparingly to make my burgers not so tall... And it was good. So very good... Not quite a Big Mac but still delicious. I even put more of the sauce on the burger and tried not to think about all the mayo in it.

In the end, I had enough left over for another burger. Next time then. It should keep -- there's nothing too perishable in it...

Okay, I am off to buy myself a notebook for NaNo and return another Redbox DVD... Yeah. Redbox. I feel so OTL.
